Karl De Smedt, the Belgian curator of Europe’s sole sourdough library, safeguards around 150 sourdough cultures from 30 countries. This extraordinary collection preserves the biodiversity of these unique cultures for future generations, offering insights into the diverse world of sourdough. While you can’t buy or borrow sourdough from the library, you can visit the lab, learn, and witness the meticulous care of these cultures by the world’s foremost sourdough influencer.
